Simply Homemade | Pink Lemonade Cuppycakes

Hi all! Sitting here with my little sissy Sarah and helper Henry Tom + we decided to make some pink lemonade cupcakes tonight for the next blog installment. These are really easy + look great when done… Here we go!

Ingredients:

1 package white cake mix
1 small package vanilla instant pudding
3 tbsp. sweetened pink lemonade drink mix (like Country Time Pink Lemonade)
1 c. sour cream ... yep!
2 tsp. lemon zest
3/4 c. water
3/4 c. oil
4 egg whites
6 drops pink food coloring

For the frosting, you can use canned (gross) or make your own:

1 c. butter, softened
1 c. shortening
1/2 c. frozen pink lemonade concentrate, thawed
2 tbsp. milk
2 tsp. vanilla
zest from 1 lemon (optional)
2 lb. package or 7 1/2 c. confectioners sugar
3 drops pink food coloring

Bake at 350 degrees for 18-20 minutes and enjoy with friends on a summer day! Adding those little Trolli half-lemon gummies are an adorable touch as well.
