How to make easy homemade boršč in your crock pot…
This is a dish I’ve grown up with, along with sauerkraut and noodles, etc. It's not only healthy, it's incredibly yummy! Boršč or “borscht” as many of you might know it is a typical Eastern European dish similar to a soup or stew, usually made with beef. This one is meat-less except for the kosher chicken broth I used. The most time-consuming part of it is the massive amount of chopping, but besides that, it is incredibly easy if you do it at the end of a day and allow to sit overnight.
You’ll need:
4 beets
1 can diced tomatoes
2 potatoes
1/2 chopped onion
2-3 garlic cloves
2-4 c. chicken broth (kosher preferred) *
1 can tomato paste
6 tbsp. red wine vinegar
2 bay leaves
1.5 teaspoons dried dill weed
3 tbsp. brown sugar
1 tbsp. dried parsley
1 tsp. kosher salt
1/2 tsp. ground black pepper
3 c. shredded green cabbage
Sour cream for garnish
* NOTE: You may need to adjust level of broth based upon other ingredients. Fill crock pot until you can see broth through the potatoes and beets, but not more.
Place ingredients in large crock pot on low setting and allow to simmer for 7-8 hours. Your house will smell amazing.
